2 lb peeled & deve...1 lb ham cut into 1/4 cubes<br />2 lb peeled & deveined shrimp<br />1 cup onion, finely diced<br />1/2 cup celery, finely chopped<br />1/2 cup bell pepper, finely chopped (any color)<br />2-3 cloves finely chopped garlic<br />1/2 cup green onions, finely chopped<br />1/2 cup italian parsley, coarsely chopped<br />1 (28oz) can whole peeled tomatoes<br />2 cups water<br />1 1/2 cups rice<br />1 1/2 tsp Salt<br />1/2 tsp pepper (to taste)<br />1/4 tsp cayenne pepper<br />About 1/2 tbsp of Worcestershire sauce<br />1/4 cup Butter<br />2 tbsp Oil<br /><br /><br />In pot with tight fitting lid. Over a Medium-High to High heat, melt butter and oil.<br />Add onions, celery, pepper, and garlic. Saute for 5-7 minutes or until wilted.<br />Add ham and saute for 5 minutes. Slightly brown. Stir consistently.<br />Add tomatoes and green onions. Stir.<br />Add salt, pepper, tsp of cayenne pepper.<br />Add rice and water and shrimp. Boil. <br />At Boil, add half of parsley, reduce to lowest possible simmer. Sweet, red strawberrie...All-American Strawberry Pie<br />Sweet, red strawberries combined with pretty, tart blueberries, all layered atop a creamy vanilla pudding...that makes a red-white-and-blue pie that my grandmother would serve every Fourth of July!<br />Ingredients: <br />• 3/4 cup sugar <br />• 1/2 cup all-purpose flour <br />• 1/4 teaspoon salt <br />• 2 cups milk <br />• 4-5 egg yolks, lightly beaten <br />• 2 tablespoons butter <br />• 1-1/2 teaspoons vanilla extract <br />• 1/2 pint heavy whipping cream <br />• 1-1/2 tablespoons confectioners' sugar <br />• 1 pie shell (9 inches), baked <br />• 1 pint fresh strawberries, halved <br />• 1 cup fresh or frozen blueberries <br />Directions: <br />In a 3-qt. saucepan, combine sugar, flour and salt. Add milk, stirring until smooth. Cook and stir over medium heat until thickened. Stir in small amount of milk mixture into yolks, then return all to saucepan. Cook, stirring for 2 minutes. Remove from the heat; stir in butter and vanilla. Cool 20 minutes. <br /> Pour into pie shell; chill several hours until firm. Whip cream and sugar; spread half over pie filling. Arrange berries on cream. Serve this wonderful Sou...Southern Sausage Gravy <br /><br />Serve this wonderful Southern-style gravy over hot split and buttered buttermilk biscuits. Biscuits with gravy make a great breakfast with fresh or spiced fruit, or serve along with a complete breakfast. The recipe below makes enough for two large portions… you’ll probably want to double it to make plenty – because everyone will want seconds!! <br />Ingredients:<br />• 8 ounces breakfast sausage <br />• 2 tablespoons shortening or lard <br />• 3 tablespoons flour <br />• 1 1/2 to 1 3/4 cups milk <br />• salt and pepper, to taste <br />• dash cayenne pepper, optional<br />Preparation:<br />Cook sausage in a medium skillet over medium-low heat, stirring and breaking up with a spatula. With a slotted spoon, removed the browned crumbled sausage to a paper towel-lined plate. Add 2 tablespoons shortening, vegetable oil, or lard to the drippings in the skillet. Add flour, stirring until blended and bubbling. Gradually add 1 1/2 cups milk; continue stirring and cooking until thickened and bubbly. Add the crumbled sausage. If too thick, add a little more milk. Taste and add salt and pepper. Stir in a dash of cayenne pepper, if desired. <br />Serve over hot split and buttered biscuits.
